BajaFire came about during a conversation at Flora Farm, while DJ Williams and Gloria Greene were making Plum Jam from ripe fruit, fallen from the trees.  Suddenly, the concept of a portable kitchen came about and the chatter turned towards this.  Where could it go?  What could it do?  How would it work?  Who would use it?

This lead to an exhaustive period of research to determine what “it” could be.  It needed to be flexible enough to do anything, from the finest and more intricate of dishes, to the most rustic.  It needed to be sturdy enough to handle the rough roads of Baja Sur without falling apart and deteriorating en route. No small moving parts.  Being that it’s based out of an organic farm, its approach needed to compliment this.  It needed to be a full kitchen, capable of anything, anywhere.

Months went into the focus and design, to ultimately create what BajaFire is.  It’s a series of wood and natural lump coal ovens, smokers and grills.  Sturdy and unbreakable, but combined with the right combination of aromatic fuels can create baked goods from live fires that are unparalleled to anything from a “conventional oven”. We blend high quality local fruits and vegetables with the best meats, spices and herbs to create cuisine that is otherworldly.  And, we can bring our equipment with us, to wherever you want to be.

BajaFire is a new approach to old cooking.  Our ovens are gravity fed and our smoker is “new technology”, but the basics still apply.  Fantastic ingredients lovingly blended in the correct order and with proper cooking techniques, over an open fire.

We are much more than a "grill".  We are a complete, fully functional kitchen, complete with sinks, storage, a stove, grills, ovens and a large offset smoker and the experience to pull it all together in a variety of ways, from small intimate gatherings, to large scale events and bold rustic cuisine!

Everything is properly chilled, cooled, cooked, heated and treated with exacting care.  We have bolted our kitchen to a rugged trailer, designed for the elements.  We are ready to go.
